I don’t usually post recipes, but today I’m making an exception.
Pancakes are the perfect winter breakfast, especially around the holidays.
These pancakes are fat free, fluffy and vegan. I’ve included the brands I use as well as the ingredients. Enjoy. (And, if you try the recipe let me know how they turned out.)

Sandy D’s Fluffy, Fat Free, Vegan Pancakes

1 cup of flour (King Arthur Bread Flour)
1 Tbsp. sugar (Florida Crystals, natural cane sugar)
2 tsp. baking powder (Rumford’s aluminum free baking powder)
1 1/2 Tbls. egg replacer (Ener-G Egg Replacer) (basically this is potato starch)
1/4 tsp. salt
1 cup soy milk (non-GMO soy, regular flavor, not vanilla)
(For a treat add 1/2 cup fresh or frozen blueberries)
Combine all dry ingredients and mix well. Add milk and mix.
Cook on medium low height. Pancakes are very thick and fluffy and need to be cooked slowly to make sure they cook all the way through.
Serve with organic maple syrup or fresh fruit.





Great recipe!You can add some cinnamon if you like it.
